If you are staying in the hotel zone, you can catch the R1 or R2 bus to downtown Cancun.

Neither of these buses directly passes Plaza Las Americas. You will want to get off at the first stop downtown, and then it is a 10-15 minute walk to Plaza Las Americas. You could also get off at the first bus stop and catch a cheap taxi to the shopping center.
